Mark Olive, aka ‘The Black Olive’, has been a chef for over 40 years and has become a well known Australian celebrity with his charismatic style and creative approach to food, starring in his own television series ‘The Outback Cafe’ and a host of cooking, lifestyle and travel shows nationally and globally. Mark’s passion for fusing native food and culture with contemporary lifestyle cooking has led to a huge international profile specialising in gourmet Australian Indigenous cuisine. He is currently seen on SBS “A Chef’s Line”, “On Country Kitchen”, “Good Cooks” and numerous guest roles around the world.
As a Bundjalung man, Mark’s family originated from the Northern Rivers region in NSW. Born in Wollongong he became interested in cooking as a child, watching his mother and aunts prepare meals. He trained under a European chef and has worked in a number of kitchens around the globe.
In high demand, Mark cooks regularly for clients such as Tourism Australia, large corporates, public and cultural events around the country and the world, bringing his signature infusions of contemporary outback flavours to every occasion.
Mark was chosen as one of the destinations on Oprah’s Victorian itinerary when she travelled to Australia with her Ultimate Audience. Her lucky guests were treated to a cultural experience of indigenous food, art and storytelling during Mark’s infamous cooking demonstration. Since then, Mark has entertained a host of dignitaries and varied audiences around the globe.
Due to his success, Mark has been selected to be a member of Tourism Australia’s ‘Friends of Australia’ program, which was “created to harness the power of bright and influential individuals who are making a name for themselves on the world stage, and who have a genuine affinity with Australia”.

Join Celebrated Indigenous Chef Mark Olive at this unique event. A traditional Bundjalung man, Mark's played a huge role in combining his passion for native ingredients with his technical background in European cookery, shaping ‘modern Australian’ cuisine.
‘Bush tucker’ is the Australian term for the huge variety of native herbs, spices, fruits, seeds, insects and wildlife that Indigenous Australians have been eating for thousands of years. To many people, the plants and the ancient cooking methods are a mystery. Today Mark Olive will bring these ingredients into everyday cooking, incorporating ancient flavours into delicious dishes suited to Australian modern cuisine.
This event would be of special interest to educators, practitioners in the health industry, chefs, apprentice chefs, hospitality teachers.

This will be a long lunch to be forever remembered. Our spectacular rural setting is perfect for this gastronomic adventure.
Our four course modern Australian menu is infused with bush tucker, ancient native herbs and spices with the utmost respect going to the producers of the ingredients for our lunch. We have collaborated with local craft brewer Thirsty Crow so you can enjoy a welcome drink of a specially produced native herb craft beer or a Wattleseed gin & tonic by Sydney based Distillery Ironbark.
Much more than a dining experience, the afternoon will be interspersed with indigenous storytelling, language, song and dance while you learn about native Australian ingredients.
