Early in Ryan's career he gained a position at SMH two hatted Waters Edge and then moved onto two hatted Aubergine, where he worked for the man who dished up two of Canberra's finest restaurants, James Mussilon.. During his time in Canberra Ryan also spent time teaching at Hotel Kurrajong (International Hotel School).
After starting his apprenticeship in Wagga Wagga, Ryan returned in September 2008 and opened the multi-award winning Restaurant Thyme Out. Ryan’s achievements have been many and include
- 2013 Thyme Out - Finalist - Contemporary Restaurant/ Formal dining in southern NSW/ACT
- 2014 Thyme Out - Finalist - Contemporary Restaurant/ Formal dining in southern NSW/ACT
- 2014- Listing in AGFG (Chef’s hat)
Since selling Thyme Out, Ryan has spent time presenting at national food & leisure shows alongside world renowned Chef, Gabrielle Gate. Ryan has now taken on the challenge to kick start the new restaurant at Romano’s Hotel called Aura. He is an accredited judge in the state sausage making competition and has also received National media attention as an up and coming young Chef with a flair for the use of Asian cuisine with a modern European twist.
