Recipe: Sweet Potato Butter

6 medium sweet potatoes
2 diced peeled apples
500ml water
1 orange rind and juice
125g packed light brown sugar
1 tbsp cinnamon
1 tsp ground nutmeg
1/2 tsp ground cloves
tbsp cider vinegar

Prick your potatoes with a knife and microwave on high until very soft. Peel the potatoes. Peel your apples and put into a bowl with a little water and cover with gladwrap. Microwave until very soft.

Place all ingredients into a saucepan and simmer very slowly until the mixture is dry and a spoon dragged through does not leave a line that runs.

Blend with an immersion blender if necessary to make it super smooth. Pour into jars, seal and cook in a water bath for 20 minutes. Let cool in the water and store in the refrigerator for about 6 weeks
