Recipe: Cucumber, Lime & Mint Sorbet
Serves 4
Note, we normally serve this as palate cleanser in small glasses or vessels
2 x continental cucumbers, chopped
6 x limes, juice
150gm caster sugar
1 x bunch mint leaves , roughly 1 cup
Method
Place all ingredients into fine blender. Blitz
Strain onto tray and freeze for an hour. Using a fork, scrape into granita and store into a container.
To serve, blend granita in blender and add lime juice to get sorbet consistency.
