Caroline, Cooking Class - February 2024
I joined the Morocco class as I have some of Ottolenghi's books and wanted to learn a more simplified version. I wasn't disappointed. Also to get a bit of a feel maybe for our forthcoming trip to Morocco!
I hadn't met Chef Shep before. He is a very competent chef and teacher. I thought he was terrific. He was cheery, direct, and really great with his instruction and tips. Really helpful.
Showing us things like 3 ways to deal with garlic, with what and why. Dealing with tomatoes in different dishes and segmenting citrus and pomegranate. Why different spices were added to whatever and best way to achieve moist slow cooked lamb. He talked about using fatty pieces of meat or poultry, about the pulses and easy ways to cook and the importance of home cooked stock as opposed to Mr Campbell's! Many more tips that I wish I had noted. Have had a small practice and am hoping to surprise friends with the lamb later in the week.
The meal was delicious and the company was great. Any time you have Shep return I would hope to be there.
